Kefir

1.  Heat the milk to 180F

2.  Coll mik to 72-74F  and add DCI Kefir culture  (1/4ts per quart of milk or 1/2 ts for 1 gallon of milk)

3.  Stir in gently until dissolved

4.  Hold temperature at 72F - 74F for approximately 12-16 hours

5. Refrigerate

This produces a kefir product similar to that made wit Kefir grains.

Shake cultures well before pouring culture into measuring spoon to assure a good mix of several different strains.
